Basically you are supposed to modify all of your A/F ratios to meet the new blend. straight gas was 14.7 and 10% ethanol is 14.0 stoich. Gas being 14.7 and ethanol being 9.0 stoich respectively. So you have to make a curve from that and apply it to find the proper Ethanol mix ratio you want to tune to. I am no math wizard but that means to burn the equivalent of a 12.0:1 gasoline burn would require @ 11.4 on 10% ethanol gasoline. Or if you are running 12.0 on ethanol blend gas that is equivalent to 12.6 on gasoline. Or soemthing like that.

All lean, what use to be 12.0 on the old pump gas is effectively 12.6 @ on 10% ethanol blend. We now need to be around 11.4 or so on the ethanol blend to be safe. It is because ethanol burns at almost twice the volume of gasoline at stoich. The stoich of gasoline is 14.7:1 straight Ethanol is stoich at 9.0:1.

So mid 10's would be a better tune? Also, is this the cause of all the det problems?

You can retune open loop but what about 95% of your driving in closed loop?

Do they make o2 sensors based on 14.0? I guess you could attempt to wire some sort of device in line to alter the voltage to or from the 02's but it wouldn't be that accurate because factory type sensors have a very narrow range that they can read.

I think low 11s is fine. The A/F has a lot to do with detonation. KB has a formula on it. Something like 1 point leaner takes 4-5 more octane points to suppress detonation at the same timing.
