Isn't there a fuel pump reset switch up by the PCM (passenger side kick panel area) that will reset the whole system in the event we're hit from behind?

The only way to trip it manually, without subjecting the vehicle to a signigicant G force, is to remove it and shake it hard. There are probably several diferent designs, but a basic one is composed of a steel ball held in place by a magnet. When the G force is sufficient to dislodge the ball, it rolls into a switch arm lever to open the circuit. The ball then rolls back into contact with the magnet. The switch is a mechanical latch open type, and you have to push the reset to close the circuit, (arm the switch). A vibration switch on large fans to shut down under excessive vibration work in similar fashion.

I was wanting to disable the pumps and thought the inertia switch would be the easy way, pulled the fuse instead.

Oh that switch, the easiest way is to pull the pump fuse a 20A in the engine bay fuse block.
